For this reason, in order to improve the traditional production of tofu, a new production center which involves the villagers and family workshops as shareholders of this collective economic entity is introduced

In Caizhai, a small Chinese village built along the banks of a river and always known for the best production of tofu in the county, the DnA Architecture and Design studio designs a new factory with a vernacular wooden structure

The volume, which includes six production functions, such as preparation room, grinding room, boiling room, frying room, drying room and tasting room, develops along a slope. All production spaces are guaranteed and equipped to improve traditional tofu products that meet the food certification standards
To observe the traditional tofu production process in sequence, there is a covered walkway leading up to the tasting room, facing a plaza open to the south and to the historic part of the village across the river. The factory, in fact, in addition to being a production space, also provides an exhibition space concerning the traditional production of tofu
